Is there an email I can send that SHOULD trigger Sniffer to think it contains spam?

There is a message in the distribution called junk.msg. You can scan it directly from the command line or you can copy it into a message and send it through.

That may not be necessary though --- if you see a log file and it is current and contains a lot of Match and/or Final lines then you are catching spam with SNF.
